I'm a huge fan of "snacks can be meals" and can often be found shoving celery sticks inside a jar of peanut butter, when I'm hungry. So I'm sure it comes as no surprise, that muesli is pretty much an everyday staple in my diet.

Parfaits are a great way to get your daily dose of fiber, whole grains and antioxidants.. and can taste like dessert! So put that ice-cream scooper down, shut the freezer door and listen.


Granny Smith green apple
mango puree
plain unsweetened yogurt

Layer ingredients starting with the fruit at the bottom, yogurt and topping it off with the muesli.

For the mango puree, I used a generic brand we found at a supermarket. They usually come in a bottle, and are meant to be mixed with water to create juice. I personally try to avoid all things artificially sweetened, especially when its in drink form. (this is so that I can have a side of bacon, whenever I feel like it, instead) I happened to have mango puree in the fridge, because my mom, who was here for a month for a visit, lovesss that stuff. Spanish mangoes don't really compare to the local home-grown ones.

In any case, the whole point of a parfait, is that you can build them to suit your taste.. I'm basically obsessed with green apples, so hello anything sweet and sour. But you can change the ingredients depending on the season, and your mood.. I even alternate muesli with granola, or sometimes corn flakes, if I happen to have some at home. But the whole fruit-yogurt-crunchy combo works to suit (I guarantee) anyone.

Also, who wouldn't want a legit snack disguised as dessert? I mean, come on. Right?
