QUINOA & SHRIMP SALAD #TuesdayTummy



As previously mentioned, I am a major fan of a good salad. And again, salads need not be boring, especially with my new-found favorite way to add some bite to your standard salad - by adding Quinoa. Here's a salad we had for dinner at home here in Spain, isn't it beautiful?

INGREDIENTS


  • cooked Quinoa
  • cooked shrimp
  • arugula
  • tomatoes
  • mangoes
  • cucumber
  • onions
Mix in a bowl, add a generous spritz of extra virgin olive oil, your dressing of choice (mine's always just a good vinegar) and some salt and pepper. Healthy never tasted so good!
